In the beginning it all started with a dream… a love to cook… the flavors and community sense of Montana… a desire to bring people together… began in a wooden shack located in Libby, Montana.

Erico “Oso” Romero grew up in the family restaurant business, which is where his love for creating fine food started. A career working with the environment led him to Northwest Montana and a love for great food and smoking meats led to him to starting Oso’s.

Our concession stand and our love for smoked meats helped us grow out of the shack and bring Oso to the Flathead Valley at our first mobile event: Cabin Fever Days 2013.  Since then, Oso has become a presence in the Flathead known for its high-end catering services, private chef services, and food truck.  See us locally at our local community markets and special events or contact us to serve you our always fresh, amazing food for any size crowd.

Oso’s Sous Chef and humble extraordinaire, Drew Parks has been with us since the summer of 2016. Originally from Minnesota, where he spent his early kitchen years learning all aspects of the restaurant industry. It was not until he moved to Oregon where he fell in love and found his passion for cooking and creating a culinary experience for everyone. Drew continued his love for cooking and restaurant management after he moved to Montana in 2012. Working around the Flathead Valley, he met Erico and after many late discussions of food and the culinary business, the two decided to partner up and the rest is history. Together, the duo leads Oso’s team of culinary and hospitality professionals to provide a memorable and unique dining experience to all our customers and clients.

With a strong foundation of authentic Mexican recipes and cooking techniques passed down from generation to generation, Erico started experimenting with combining the family recipes with his cured and smoked specialties.  Erico’s smoked meats combined with an authentic Mexican twist has made Oso’s dishes unique to anything else in the Flathead Valley. Working with and becoming friends with some great culinary minds, our flavor profiles have grown to provide our guests and clients with an excellent meal.
